Winemaking grapes are manually harvested from the limestone-rich Engelberg Grand Cru vineyard, spontaneously fermented in stainless steel to preserve freshness, and aged for an extended period on the fine lees before bottling to develop complexity and a characteristic mineral backbone. The fermentation is natural and temperature-controlled, followed by a lengthy maturation period to achieve a dry, pure, and elegant style that highlights the unique characteristics of the vineyard.

The Story
Fermented and aged on the lees in 3-4 year old barrique with no batonage—Bechtold feels that barrel fermentation is more expressive of the terroir. Scintillating and elegant; a fine version of the Pinot Gris with gentle acidity.
