Winemaking The fruit for this wine was harvested using a selective processor in early to mid - April 2021, from our Upton Run block . After crushing gently, the juice was wild fermented in stainless steel to stabilize and integrate natural flavors, then matured in French oak for 18 months to add delicate oak aromas. A dash of Merlot (9.52%) was added to the final blend to add some dark berry characters.
